Make-It Monday: Peach Pie


I decided to get back with the program. It's been a while, but we made this pie last week and it was absolutely delicious. I didn't refrigerate the crust at all, and it still worked perfectly. Enjoy!


Perfect Pie Crust

Ingredients

  • ⅔ cups Cold Lard
  • 2 cups Sifted All-Purpose Flour
  • ½ teaspoons Salt
  • 4 Tablespoons Cold Milk

Preparation Instructions

Measure lard and place in the freezer. Sift flour onto a piece of parchment or wax paper. Re-measure flour and sift again with salt into a mixing bowl. Using a pastry cutter, cut cold lard into the flour mixture until the dough resembles small peas. Do not overwork. Add 2 tablespoons milk and work into the dough using a fork. Add one or two more tablespoons of milk, working with a fork until the dough pulls together into a nice ball. Divide into two equal pieces and lightly work into disks. Wrap disks individually in plastic wrap and refrigerate for 1/2 hour or up to one day. On a floured work surface, roll out into a 12-inch disk about 1/8 inch thick and place into a pie plate.
Fill and bake according to your pie recipe. If a recipe calls for a pre-baked pie crust, pierce evenly around the crust with a fork and bake in a 400ºF oven for about 15 minutes or until golden brown. Makes one double crust or 2 single crusts.


Mom’s Fresh Peach Pie

Ingredients

  • 1 cup Water
  • 1 cup Sugar
  • 4 Tablespoons (Heaping) Corn Starch
  • 3 drops Yellow Food Coloring
  • ¼ cups Fresh Lemon Juice
  • 1 pinch Salt
  • ¼ cups Butter (1/2 Stick)
  • 6 whole Peaches, Peeled And Sliced
  • 1 whole Precooked 9-inch Pie Shell

Preparation Instructions

Combine water, sugar, cornstarch, food coloring, lemon juice and salt in a medium saucepan. Whisk until combined. Stirring constantly, cook over medium heat until thick and almost hard to stir. Remove from heat and add butter; stir until melted and combined. Add peaches and gently fold to coat. Pour into precooked pie shell. Refrigerate for 4 hours to set.
Top with whipped cream and serve.

Potty Trained!

I think we've finally done it! We've gone 3 days without accidents now, and it is great. We are still using pull-ups at naps and night time, but he is starting to stay dry through his whole nap, so that will end soon as well! The other night, we had a short thunderstorm, and he got so scared that he peed in my lap, which was kind of funny. The same day, he had to go so bad that he didn't get his pants down in time and just sat down and peed with them on. It was also pretty funny. Other than that, he has been doing great this whole week! I bought him some regular underwear on Saturday, and he's been doing great since wearing those instead of the padded ones.

Fun in July

Well, I am doing pretty poorly at keeping this blog updated regularly. We haven't been up to a whole lot lately, being busy with work and what not. This past month we were able to have my parents come stay with us for a few days. It was nice. We don't get to see them very often, so I was glad Tyler was able to get to spend time with them and get to know them better. Here are a few pictures of some things we've been doing.

We went to the zoo with my parents while they were here. It was kind of disappointing because a lot of the exhibits were "under construction", but we did get to see the elephant show, which Tyler loved because he is really big on elephants.



On the August long weekend, we went down to Drumheller for the day with everyone in my family except for Mal, Cody, and Steve. It was a lot of fun to get to see everybody. We met up at the giant dinosaur, had a picnic lunch, and then let the kids swim for a while. They had a great time. The weather was fantastic. I managed to get pretty sunburned in the couple of hours that we were outside.


This is our nephew Morgan, Tiff and Chad's boy. He was having a great time swimming.



After playing at the water park, we headed to the Royal Tyrell Museum. Tyler was asleep for the first half of the visit. When he woke up, he thought it was pretty cool, though he seemed a bit more interested in pushing the stroller than anything else.


We went to Castrol Raceway last night for some drag racing. Trevor got to race his Ducati on the quarter mile. He had a pretty good time. His buddy Travis was there as well, so they got to race each other. Tyler didn't like how loud it was, so we left Trevor there and came home to bed.



One day while we were outside, Tyler asked for his hat, but didn't want me to go into the house to get it, so he improvised. He rode around with his shirt pulled up on his head like this for about 10 minutes or so. It was pretty funny.
