Car Pictures




Goodbye Elantra, You've Been Great!

For those of you that haven't heard, I was in a car accident yesterday. I was on my way to pick up Tyler from day home. I was travelling up 66th street North. I got to 12 Ave and noticed a school bus pulling across 66th St in front of me. I slammed on my brakes, but to no avail. I went right into the side of the bus, just in front of his back tire. The back end of my car was smashed. I hit my head on the side window of my car. 3 witnesses stopped and gave me their information. One lady stayed until everything was all taken care of. She was really nice.

 Trevor called his brother Spencer to come and pick him up at home so they could come to the scene. On his way to get Trevor, he got pulled over for talking on his phone because he was lost. Trevor ran to where he was and they were able to get out of the ticket.

We towed the car to Herber's, and they called me this morning saying it is definitely going to be a write-off. I have had the car for almost 10 years and have never had a problem with it. We were just saying a couple of weeks ago how we would for sure get at least 5 more years out of it. Well, I guess not!

I have a couple of pictures of my phone, but will have to wait until I get home to upload them. Today I am feeling a bit nauseous, so I guess I will go to the doctor this afternoon and make sure it's not a concussion. Ah, good times! I am just glad Tyler wasn't in the car with me. He started crying when they towed the car away, so imagine if he had been in the car!

Make-It Monday

Snickerdoodles - Perfectly Soft

adapted from Lion House Desserts

1 cup butter, softened
2 ½ cups sugar
4 eggs
1 teaspoon vanilla extract
2 ½ tablespoons water
6 cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
½ teaspoon salt

1 tablespoon cinnamon*
3 tablespoons sugar*

Heat oven to 350. Mix together the 3 tablespoons of sugar with the cinnamon.

In a bowl, whisk together flour, cream of tartar, baking soda and salt. Set aside.

Combine butter and 2 ½ cups of sugar until light and fluffy. Add the eggs, vanilla and water. Beat until fluffy.

Add the flour, cream of tartar baking soda and salt.

Drop cookies by rounded tablespoonfuls into the cinnamon sugar mixture and coat well. Place dough on a cookie sheet and bake for 9-10 minutes.

*The ratio of cinnamon to sugar is really to your liking. The combination I use is pretty heavy on the cinnamon, but I like it that way. If you want cookies that are lighter in color, just add more sugar.

**This is by far the BEST snickerdoodle recipe I have ever made. We have made them twice in the past week. Tyler loves them. They really are perfectly soft. So delicious!

Make-It Monday

Pizza Crust
Serves: 1 pizza
Bake Time:  12-15 min
Temp: 450 F

1 Tbsp   yeast
1 cup   warm water
1 tsp   sugar
1 tsp   salt
2 Tbsp   veg. oil
2 1/2 cups   flour

Dissolve yeast in water. Add remaining ingredients. Dump onto floured surface. Knead 5 minutes until smooth (I just leave mine in my bosch and mix until it is smooth). Roll out onto greased pan. Add toppings.

**I love this recipe. No rise time, and it still puffs up nicely when baked. We used it all of the time!

I Like Your Boy

The other day we were out for a bike ride/ walk. We ran into a little girl, who called to us "I like your boy"!. It was hilarious. Her mom was laughing pretty good about it. Her brother was there as well and seemed pretty fascinated with Tyler's pedal-less bike. Tyler is getting to be pretty good on his bike. He likes to find hills to go down and lift his feet up. Every opportunity he gets, he is on his bike. He has been pretty excited about the park lately as well, with the bit of good weather we get every couple of days. I think we will be spending a lot of time there this summer.

Our Easter was pretty fun. On Friday, we went to the Muttart Conservatory with the Patrick clan. Tyler and Beck had a great time running around everywhere. They love to see the flowers and waterfalls. On Saturday, we went over to Liz's house and died Easter Eggs and played all afternoon. It was a lot of fun. Tyler had a great time. On Sunday, we went out to Wizard Lake for dinner and an Easter Egg hunt for the kids. Tyler loved finding the eggs, and got way too many. I have been trying to monitor how many he eats a day, with little success. There was no dayhome on Monday, so we went swimming at the Terwillegar Rec Centre with the Patrick's again! We always have a good time at the pool. Tyler is getting to be quite a good little swimmer. He wears a tube, and kicks and paddles his arms, and is able to move along quite quickly.

Last night, I decided to try having him sleep in underwear for the first time. He of course peed the bed, which I was expecting. What I wasn't expecting was the 20 minutes of crying when I removed his wet pants and underwear upon waking up. He was very upset about it. I think he was a little embarrassed that he wet the bed. We'll see if he wants to attempt it again tonight or not!

Make-It Monday

Today I am giving you 2 recipes. I made both of them yesterday and really liked each of them. Give them a try!

Mini Meatloaves

1 Lb   Hamburger
1 pkg   Stove top
1 tsp   Italian Seasoning
1 cup   water
3/4 cup   pasta sauce
3/4 cup   shredded cheese (you choose the flavor)

Mix hamburger, stove top, seasoning and water. Put into 12 greased muffin cups. Use a spoon to indent the top of each loaf. Fill with pasta sauce. Cook at 375F for 30 min. Add cheese and cook 5 more minutes, or until cheese melts.


Giant Gingersnaps

4 1/2 cups   flour
2 tsp   baking soda
1 tsp   salt
4 tsp   ground ginger
1 1/2 tsp   ground cloves
1 1/2 cup   shortening
2 cups   sugar
2   eggs
1/2 cup   molasses
3/4 cup   sugar for rolling

In bowl, mix flour, soda, salt, ginger and cloves. Set aside. In mixing bowl, beat shortening until soft. Gradually add sugar, beat until fluffy. Add eggs and molasses. Beat well. Add half of flour mixture. Beat until combined. Stir in remaining flour mixture with wooden spoon. Roll into 2 inch balls, roll in sugar. Place 2 1/2 inches apart on ungreased cookie sheet. Bake 12-14 minutes at 350 F until light brown and puffed. Drop sheet on counter to even out. Cool for 2 minutes on pan, then move to cooling rack.
