Make-It Monday

Cheesey Chicken & Salsa Skillet
Serves: 4
Source: Kraft
450 Calories per serving

2 cups   Penne, uncooked
1 Lb   Chicken Breast, cut up
1 1/4 cup   Salsa
1 cup   Frozen Corn, thawed (I never thaw it, I just cook it a little longer)
1 large   Green Pepper, cut into strips
1 cup   Tex Mex shredded cheese

Cook chicken. Add salsa, corn & peppers. Bring to boil. Simmer 10 minutes. Add cooked pasta and mix. Sprinkle with cheese. Remove from heat and cover for 1 minute.

**Just realized I already posted this last year. Guess that means I like it a lot!

Make-It Monday

Baked Chicken Parmesan

Servings: 8 • Calories: 224.5

4 (8 oz) chicken breast halves, sliced in half
3/4 cup seasoned breadcrumbs
1/4 cup grated Parmesan cheese
2 tbsp butter, melted
3/4 cup reduced fat mozzarella cheese (I used Sargento)
1 cup marinara or Filetto di Pomodoro
cooking spray

Preheat oven to 450°. Spray a large baking sheet lightly with spray.

Combine breadcrumbs and parmesan cheese in a bowl. Melt the butter in another bowl. Lightly brush the butter onto the chicken, then dip into breadcrumb mixture. Place on baking sheet and repeat with the remaining chicken.

Lightly spray a little more cooking oil on top and bake in the oven for 20 minutes. Turn chicken over, bake another 5 minutes. Remove from oven, spoon sauce over chicken and top with shredded cheese. Bake 5 more minutes or until cheese is melted. Serve over pasta of choice.
 
**Trevor told me that this was better than Olive Garden when we had it for dinner the other day. It really was quite delicious. Tyler couldn't get enough.

Race Around the World

This is the name of Tyler's favorite episode of this show:



We have watched it every day for the last 3 or 4 days, sometimes twice a day. We just recently started watching Backyardigans on Netflix, and have made it through Season 1. Tyler absolutely loves it! He will honestly watch episode after episode, and will laugh hysterically at parts. I don't mind it either, actually. Sometimes the songs aren't the greatest, but it's pretty enjoyable for the most part.

We are all finally starting to feel better after being sick for a week! Trevor missed every day of school last week, and I missed 2 1/2 days of work. It was brutal, but we are done! All that remains is a little tiredness and coughing. We are getting caught up on schoolwork, housework and everything else. Being sick is the absolute worst!

Make-It Monday

Chicken Fajita Rollups

2 tsp  oil
1 Lb  chicken breast strips
1 large  Green Pepper, strips
1 large  red pepper, strips
1/2 cup  salsa
1/4 cup  ranch dressing
4 large  tortillas, warmed
1 cup  shredded cheese
1 1/2 cups  shredded lettuce

Cook chicken in oil. Add peppers, cook 8 minutes or until chicken is done. Remove from heat. Stir in salsa & ranch dressing. Spoon mix down centers of tortillas, top with cheese and lettuce. Roll tightly. Cut in half.
*Sprinkle chicken with 1 tsp chilli powder before cooking if desired.

**I have made these a few times and we love them. Tyler even eats them. They are delicious!

Seven Pounds

If you are looking to lose some weight fast, come to my house. Since weighing myself on Friday, I have lost 7 POUNDS!!! We have had some nasty bug since Saturday, missing work and school. It has been the absolute worst. All 3 of us have it bad. No energy, high fever, chest cough, chills, Aches all over. I have not been this sick in a very long time!
